3 parsnips, chopped
1 1/2 cups of carrot, chopped
1/2 tsp Himalayan salt
1/4 tsp black pepper
2 tbsp extra virgin olive oil
2 tbsp Dijon mustard
1/4 cup real maple syrup
2. Place carrots, parsnips and sweet potatoes on a baking pan. Coat with olive oil, Himalayan salt and black pepper.
3.Roast in oven for 15 minutes. Take out, toss on baking sheet and cook for another 15 or until vegetables are soft.
4.While vegetables are roasting, mix maple syrup, Dijon mustard and garlic powder.
