This heavenly vegan mashed potato recipe is one you're definitely going to want to try. The dish is packed with nutrients like vitamin C, vitamin b6 and potassium.
Health benefits of eating this dish include:
-promotes cardiovascular and nerve health
-high in fibre to promote digestive health
-increased immune system 

-2 tbsp vegetable broth
-1 bay leaf
-3 leeks, sliced (just the white part)
-2 lbs of yellow potatoes, chopped
-3/4 tsp Himalayan salt
-1 tsp ground pepper
-2 tbsp unflavoured/ unsweetened almond milk
1. In a large saucepan, heat vegetable broth over medium heat. Add the leeks and heat for about 5 minutes.
2. Add potatoes, bay leaf, salt and pepper. Cover with water. 
3. Bring to a boil over high heat, then reduce and simmer for 20-25 minutes (or until potatoes are tender).
4. Drain and discard bay leaf.
5. Mash potatoes with potato masher and add unflavoured almond milk.
